A new, very gourmet and very US boutique has just opened on rue des Tourneurs in Toulouse: Biscuit Bakery. The opportunity to taste (to take away) American cookies made on site, ice creams but also the star of the house since its opening: cookie dough.
Biscuit Bakery, the new "cookiterie" in Toulouse
"I like taking on challenges and after a stay in Bordeaux, I wanted to set up my own cookie shop", Vanessa Crouzil, head of Biscuit Bakery since June 2024.
After 32 years in Paris, Vanessa Crouzil moved to Toulouse 15 years ago and it was here that she opened Cocotte (a jewelry store on rue Saint-Antoine du T) in 2014, before selling to launch herself in a completely different field: American cookies, soft on the inside and crunchy on the outside. It was therefore on June 6, 2024 that Biscuit Bakery was born on rue des Tourneurs in the city center.
To embark on this gourmet adventure, Vanessa Crouzil is helped by her husband (her first supporter), by Tom and Pauline in baking and cooking, but also by Spatule Prod, "an advertising agency that makes all our recipes", she explains to the Toulouscope editorial team.
A varied menu with sweet and savory
In the transparent display case, we find sweet cookies classic and timeless (chocolate, lemon, pistachio…), original and ephemeral recipes (black sesame, matcha…), savory flavors, gluten-free, but also ice creams and cookie dough, "a mix between raw cookie dough and thick cream ice cream, but it's not frozen". A little treat (not to say killer) from the United States and very popular with customers, especially since it can be enhanced with toppings or glazes...
As for drinks, there is also a choice since the head chef offers matcha drinks, sodas or even good specialty coffee.
Carefully selected ingredients
To make these 300 or so cookies a day and other to-die-for recipes, Vanessa only uses good quality products such as Valrhona (a responsible brand) for the chocolate, very little sugar (and no refined sugar), free-range eggs, pesticide-free flour... And everything is baked and prepared on site in the small laboratory, which is open to the rest of the store with colors that are both lively (like the owner) and soft.
A product menu that tends to evolve
"My menu will evolve over the weeks because it is the feedback from my customers that allows me to create my menu".
If Biscuit Bakery has just opened, Vanessa Crouzil, daughter of shopkeepers, has ideas full of her head like: offering a lunch menu and one for afternoon tea, "boxes with the flagship products and another with the most original cookies from the selection", she tells us, aware that "it is the customers who make the menu evolve".
The latter also plans to develop its gluten-free range, its giant cookies made to order (for €29) where everything is customizable, and smaller formats for events.
