A seasonal menu
The SW is keen to highlight “local, organic products and from short circuits", explains Grégory Fritsch, kitchen assistant. In order to make the most of them to delight customers' taste buds, he says: "for 2 months, the menu has changed depending on the season. It can be changed every month !We constantly adapt the menu to offer seasonal products that best suit the period.” The menus are changing but the flavors are immutable. The opportunity for regulars to enjoy a new menu each time they come.
Vegetarian, vegan, gluten-free cuisine…
If we find the essentials of bistro cuisine on the menu, the South West team is keen to satisfy all gourmets with vegetarian, vegan and gluten-free recipes. Alternatives which are even adopted by the most carnivorous customers “Many non-vegetarian customers are tempted by our meat-free offerings and are very satisfied with them” enthuses the second in the kitchen of the establishment. Thus, they taste Jerusalem artichokes with clementines with their juice pearled with herb oil, or even tzatziki falafels…
