It is in Puylausic in the Gers, just 1 hour from Toulouse, in this beautiful residence which saw the singer Pierre Vassiliu flourish, that Cynthia and Julien opened their own restaurant: La Maison Déspouès. A completely redesigned address set in a cozy and refined setting for a deliciously timeless culinary experience.
A sublime place steeped in history
"This house which saw the birth of musical inspirations will now see culinary ideas emerge.", La Maison Despouès.
La Maison Déspouès is a gourmet restaurant< /strong> which opened on June 25, 2021, thanks to the love story between Cynthia and Julien, a chef who has twice obtained a star in the Michelin Guide (Domaine de la Corniche in the Paris suburbs and L'Auberge du Bois Prin in Chamonix). "We both met at Domaine de la Corniche, and we needed this return to our roots, in the Gers", Cynthia tells us. We wanted to open our restaurant, so it took eight months of research with around forty unsuccessful visits". Until this day in July 2020 when they came across this house, belonging to the star singer of the years 80, Pierre Vassiliu.
The place is now unique, as is the view since the restaurant is located in Puylausic in the Gers, and offers a breathtaking view. 360° view of the Gers valleys and the Pyrenees mountain range.
A gourmet restaurant accessible to all, noon and evening
"At the piano, chef Julien Razemon manages his brigade masterfully and leaves nothing to chance.", La Maison Despouès.
Cynthia works in the “shadows” of the family business, while Julien Razemon – also worked in (three-star) Michelin-starred kitchens – is in the kitchen, with his brigade, to delight the taste buds and pupils of young and old gourmands.
Stars that do not change the history of the address, which aims to be open to all. “One of our biggest wishes is to remain accessible to all”, Cynthia told us. The proof: the first price starts at 37 euros for lunch with a starter, a main course and a dessert, then for a four-course meal, count on €45 and €52 for a lunch in five courses. In the evening, let yourself be transported on a blind journey to discover the chef's carte blanche in 3 courses (€45), 5 courses (€60) or 7 courses (€80).

A short but perfectly crafted map
"Julien is keen to renew his menus every two weeks and his menu every month in order to be as close as possible to seasonality", The Maison Despouès.
A chef with a distinguished career who has imagined, with time and his experiences, his own specialties, “what the chef really likes to work with – and he does it to perfection – are the beautiful langoustines from Brittany, and the crispy sweetbreads…”, his wife explains to us. And to reveal to us the house's flagship dessert served only in winter: "It's the soufflé that is available in several different alcohols".
< p>A la carte, short and concise (it includes two starters, two main courses and three desserts), all the products are fresh, seasonal, worked mainly with carefully selected local producers, and on circuit short.
Festive and friendly events
Like the place, the couple organizes chic, festive and friendly events, the next of which is scheduled for Friday June 28. "We're going to do an event with la Maison Allande (it's the last French corset maker) during which customers will be able to dine while attending an exceptional fashion show", Cynthia informs us.
Also, La Maison Despouès has a garden which is used to take the café or attend the evenings called “Les pieds dans l’herbe” during which “we organize an evening in cocktail dinner mode with a concert, a group or a duo…”. Musical evenings to discover in this natural setting on certain Friday evenings between May and August: May 31, June 14, July 5, July 26 and 23 August.
Composed of a team of 12 people (including a pastry chef from the Paul Bocuse school) and 16 tables spread over three rooms, La Maison Despouès therefore wishes to maintain its status as an affordable gourmet restaurant, both intimate and warm.
