Revolutionizing the world of gluten-free is the challenge of the Toulouse concept Sans Gluglu! It offers boxes to receive directly at home that allow you to cook and then enjoy a tasty pastry with gluten-free ingredients.
Recipes developed by a celiac pastry chef
Pauline Grelet is the pastry chef who is at the origin of the Sans Gluglu project. Passionate about her job, she had to face an upheaval a few years ago: learning that she was coeliac. This is a chronic and autoimmune intestinal disease linked to the ingestion of gluten. The professional therefore decided to rediscover pastry, by cooking with new ingredients adapted to people suffering from the same pathology. “I trained in gluten-free baking at a school, it’s another way of doing things that I had to learn.”
The chef joined forces with Hugo Clavé, a digital enthusiast, and this is how Sans Gluglu was born, an innovative online concept that allows you to bake and treat yourself differently!
"The boxes aim to provide a moment of indulgence, which is not always easy when you are intolerant to gluten" continues Pauline.
A box with gluten-free ingredients
Via the website, boxes with different recipes are offered, such as those for vanilla choux and chouquettes, strawberry cake or even trianon au chocolat. In each of them, you will find pre-weighed ingredients, of quality and certified gluten-free: rice flour, organic sugar, dark chocolate from sustainable agriculture... Sans Gluglu works only with French and European suppliers, in order to limit the environmental impact as much as possible. “There are industrial alternatives to gluten but we wanted to offer only quality products for our boxes” explains Pauline.
The essential accessories for making cakes are also provided, with for example a stainless steel circle, a strip of rhodoid, a nozzle, a cookie cutter or even a presentation support according to the chosen recipe. Enough to equip yourself like a professional to embark on a pastry session like no other!
“We wanted each consumer to have professional accessories to reproduce pastries in the best conditions." she says.
Exclusive booklets and videos to follow the recipes
In addition to the ingredients and equipment, the box comes with a booklet that allows you to easily follow the different steps of the recipe. All the instructions are clear and accessible so that you can make a tasty cake even if you are a novice in baking! For fans of tutorials, exclusive videos with advice and explanations are also available.
After following the recipe, all that's left to do is enjoy: gourmet flavors are on the menu and allow you to rediscover traditional pastries, all without depriving yourself!
Since the launch of Sans Gluglu, Pauline and Hugo have been offering a different recipe every month. A pace that they want to maintain, with other proposals for the future “We would like to develop a savory box but also birthday cake recipes. The field of possibilities is open to us”
